Ingredients

  • 10 medium beefsteak tomatoes
  • 1 pound lean ground beef
  • 2 slices white sandwich bread
  • 1 ½ teaspoons kosher salt
  • ¼ teaspoon ground black pepper 
  • 1 egg, beaten well
  • ½ cup flour 
  • ½ cup canola oil
  • ⅓ cup water

Preparation

  • Step 1

    Cut about ¼ inch off the top of the tomatoes crosswise. Scoop out the seeds and meat from the tomatoes. 

  • Step 2

    Soak a loaf of bread in water for about 10 minutes and drain. 

  • Step 3

    In a mixing bowl, place the ground beef, bread, salt, and pepper. Mix until combined well. Stuff each tomato with about 1 tablespoon of the beef mixture, using your palms to flatten out the top of the filled tomatoes. 

  • Step 4

    Add ½ cup oil into a saucepan and set it over medium high heat. Add the beaten egg into a small bowl. Add the flour into another small bowl and set aside. 

  • Step 5

    Starting with one stuffed tomato, dip the top of the tomato into the flour, shake any excess flour off, and then dip the top of the tomato into the egg wash and place on a plate. Repeat with the remaining tomatoes.

  • Step 6

    Once the oil is hot, place the tomatoes into the pot with the top of the tomato down into the oil. Fry the tomatoes until their tops are golden brown. Transfer the fried tomatoes into another skillet. Place them into the pan with the fried side up. Add 1 cup of water into the pan or enough to cover 1/3 of the tomatoes. Place the pan over medium high heat and bring the water to a boil and reduce the heat to low. Cover the pan and cook the tomatoes over a gently simmer until the meat is cooked, the tomatoes are tender and about ¼ of the water remains, about 30-40 minutes.
