Chef Michael Solomonov uses this charoset to top his beef-filled mina, a Sephardi Passover pie. He adds carrots, horseradish, and cilantro, to the classic apple and walnut.

Ingredients

  • 4 carrots, peeled and grated
  • ½ apple, peeled and grated
  • ½ cup walnuts, chopped 
  • 1 cup fresh cilantro, chopped
  • 2 tablespoons fresh horseradish, grated
  • 2 tablespoons raisins
  • 1 tablespoon white vinegar
  • 3/4 teaspoon kosher salt

Preparation

  • Step 1

    Combine the carrots, apples, walnuts, cilantro, horseradish, raisins, vinegar, and salt in a medium bowl. Toss to combine.

  • Step 2

    Set aside for at least 15 minutes to allow the flavors to combine. Serve fresh.
