Our Favorite Matzo Recipes for Passover — and Beyond

Anyone who has ever purchased a large box of matzo for Passover has met the same fate: leftover boards, sometimes boxes and boxes of them. The recipes in this collection are some of our favorites for making the most of them. There’s author Michael Twitty’s matzo balls in a sauce inspired by West African yassa chicken, matzo crusted fried chicken, Alison Roman’s matzo brei, and mina, a Sephardi dish where matzo is stacked with meat or vegetables.
If you need more matzo meal, you can make it easily by breaking sheets of matzo into smaller chunks and pulsing them in a food processor until you reach a fine crumb consistency.
